Peanut Brittle


Ingredients
1 Tbsp Baking Soda
1 tsp vanilla
1Tbsp butter
1/2 cup water
1 cup light corn syrup
2 cups sugar
dash salt
2 cups raw peanuts

Directions
Lightly butter two cookie sheets
In a small bowl, place baking soda and butter and set aside.
In a medium sauce pan over med-high heat, bring the water, corn syrup, sugar, salt and peanuts to a boil stirring constantly with a wooden spoon. once boiling, clamp candy thermometer to side of pan making sure it doesn't touch the bottom. Stir occationally to make sure the peanuts do not stick to the bottom of the pan. Cook until the temp reaches 296 degrees F.

Remove from heat and stir in vanilla, butter and baking soda, stir for about 30 seconds. Pour out onto cookie sheets and spread out with spoon. Let cool then store in a air tight container for up to two weeks... not that it'll last that long ;)

Mint Brownies

Oh, chocolate mint, how I love thee!! No really, I do!! This is another Mark Bittman recipe to submit to IHCC. At the bottom of his recipes he always includes several "add in" suggestions and so to his basic brownie recipe I chose to add peppermint extract and mini chocolate chips. Brownies are so simple to make and the addition of peppermint and chocolate chips made these irresistible, so irresistible in fact that they just disappeared!!  I wish I would have made more, because I just keep thinking about how good they were… Hmmm, maybe tonight I'll make another batch and add a little almond extract and almonds. Hazelnut Cinnamon Rolls

Recipe courtesy Giada De Laurentiis I love cinnamon rolls, and hazelnuts and icing... but mostly, I love that this recipe starts with a loaf of frozen dough!! I love short cuts and things that make my life easier... in general. I'm submitting this to IHCC for Potluck week. Ingredients 3 tablespoons butter, melted 1/3 cup hazelnuts, toasted and coarsely chopped 1/4 cup packed dark brown sugar 2 tablespoons sugar 1 teaspoon ground cinnamon 1/8 teaspoon ground cloves 1 (1-pound) loaf purchased frozen white bread dough, thawed  3/4 cup powdered sugar 3 tablespoons mascarpone cheese 1 tablespoon buttermilk Directions Brush 1 tablespoon of melted butter over the bottom and sides of an 8 by 8 by 2-inch baking dish.
